Rainbow Skittles Cookies

These Rainbow Skittles Biscuits are an easy recipe to make and take less than 15 minutes to bake. Decorate with Rainbow Skittles, M&M's, Chocolate Chips or other small colourful sweets.

Equipment

Ingredients

  • 75 grams icing sugar sieved + extra for dusting
  • 150 grams unsalted butter softened
  • ½ teaspoon Vanilla Extract
  • 150 grams white Spelt flour or plain flour
  • 75 grams cornflour
  • 100 g Rainbow Fruit Skittles The quantity depends on how much you wish to decorate each skittles biscuit. Chocolate drops are a great alternative.

Instructions

  • Preheat the oven to 160deg fan assisted. Have ready a couple of baking trays lined with baking parchment.
  • Cream the butter, vanilla extract, and icing sugar together until well combined.
  • Add the sieved spelt flour and cornflour. Mix everything together until you have a smooth firm dough.
  • Weigh the dough and shape into approx 10 golf ball sized pieces each weighing the same. Mine weighed 44 grams each. Place these onto the prepared baking sheets with a little space around them to allow for any spread, which should not be much.
  • Press down each ball of dough a little, arrange the rainbow skittles or chocolate drops on top.
  • Bake in the centre of the oven for 12 - 15 mins. Or until they are just beginning to turn a very light golden colour. Do not leave them in too much longer as the skittle shells will begin to melt and the sweets will become very hard and chewy.
  • If you wish, dust each biscuit with icing sugar when cooled completely.

Notes

Cookie dough will freeze well when portioned individually on an open tray before storing in a suitable freezer container.
Bake for a couple of extra minutes if baking frozen cookie dough. Or bring it back to room temperature before adding any decorations, and bake according to the recipe.
Baking times will differ slightly if you chose to make the biscuits larger /smaller/thicker but only by a few minutes.
