Equipment

  • 2 pint ovenproof Baking dish measuring approx 8inch x 7inch.
  • Baking Tray optional

Ingredients

For the crumble Topping

  • 170 g Wholemeal flour such as Spelt Plain white flour is fine.
  • 100 g butter unsalted fridge cold cut into chunks.
  • 50 g Demerara sugar Granulated or caster sugar is also fine.

For the Filling

  • 900 g Dessert Apples approx 7 apples
  • ½ teaspoon ground cinnamon

Instructions

  • Preheat the oven to 180 deg C conventional oven. Butter the sides and base of a 2 pint ovenproof Baking dish measuring approx 8inch x 7inch.
  • Make the crumble topping first. Mix the flour and sugar in a large mixing bowl. Rub the butter into the flour mixture using your fingertips until you have a fine breadcrumb consistency. This can be speeded up using a food processor.
    170 g Wholemeal flour such as Spelt, 100 g butter, 50 g Demerara sugar
  • Core the apples, there is no need to remove the peel, and cut into half inch chunks. Place the apples in a bowl and add the ground cinnamon. Give everything a good mix ensuring all the apples are coated in the cinnamon spice, then tip the apples evenly into the prepared ovenproof dish.
900 g Dessert Apples, ½ teaspoon ground cinnamon
  • Sprinkle the crumble topping evenly over the fruit. Ensure all the crumble topping is evenly distributed and pressed down slightly as this will give a nice crispy topping when baked.
  • Bake in the centre of the oven for 30 – 40 mins or until baked with a nice golden colour. A firm baking sheet underneath the dish will help catch any fruit juices that may spill over.
  • Serve hot with fresh cream or homemade custard.

Notes

Tip 1 - Try using a mix of baking and dessert apples for a balance of sweet and shape flavours. Add sugar to taste.
Tip 2 - Replace some of the flour with porridge oats if you want a crumble topping with oats.
FAQ.
How Do I make a Crumble Topping Crisp?
Make sure your flour, butter and sugar are evenly distributed and in balanced quantities. I am also fine using Demerara or granulated sugar, which has larger granules that help give a crispy texture to the topping.
