Fruit and Seed Flapjacks with Banana

These Fruit and Seed Flapjacks are made using an overripe banana, a combination of dried fruits such as raisins and sultanas, and a mixture of various seeds like sunflower seeds, wheat flakes, barley flakes, millet, and oats.

Equipment

Ingredients

  • 170 g Unsalted butter
  • 100 g soft brown sugar
  • 50 g Honey
  • 150 g Mixed Dried fruit such as currants, raisins and sultanas
  • 30 g Mixed seeds such as sunflower, wheat flakes, barley flakes, chia seeds or seeds of your choice.
  • 225 g Porridge Oats not jumbo oats
  • 1 ripe banana
  • 50 g Wholemeal Spelt Flour or plain white flour

Instructions

  • Preheat the oven to 180c fan assisted. Grease and line the base and sides of an 8inch (20cm) x 8 inch (20cm) square tin with baking parchment.
  • Melt the butter, sugar and Honey in a large pan over medium heat, until everything has melted. Taking care not to boil the mixture.

  • Remove the pan from the heat and stir in the mixed dried fruit, this allows the dried fruits to soften a little. Mix thoroughly.

  • In a separate bowl, mix together the flour, seeds, and oats. Next, add the melted butter, sugar, honey, and dried fruits mixture to the bowl and stir everything thoroughly until all the dry ingredients are incorporated.
    30 g Mixed seeds, 50 g Wholemeal Spelt Flour, 225 g Porridge Oats
  • After that, mash the banana and add it to the mixture. Give everything a good mix ensuring the dried fruits and banana are evenly distributed.

  • Spread the Flapjack mixture evenly and firmly into the prepared tin.
  • Bake in the centre of the oven for 15 - 20  or until baked and golden brown in colour.
  • Remove from the oven and leave in the tin to cool completely before slicing into individual bars. If you slice Flapjacks while they are still hot, they will crumble.
  • Keep in an airtight container.

Notes

Tip 1 - Adding a little flour to any flapjack mixture helps give them a chewy texture.
Tip 2 - Adding the dried fruits to the melted butter, honey and sugar will help plump up the fruits before you add them to the dry ingredients.
Can I use any Dried Fruits in Fruit Flapjacks?
Mixed dried fruits or a mix of Raisins, Currants Sultanas and candid peal are ideal for making Fruit and Seed Flapjacks.
Can I Use Any Mix of Seeds in Flapjacks with Seeds? Use a blend of seeds like Sunflower seeds, Pumpkin Seeds, Barley Wheat, Chia Seeds, or any other seed variety that you prefer.
Can I use any Banana in Flapjacks?
While overripe bananas are sweeter, you can still use Bananas that are firm and ripe. To avoid any lumps of bananas, make sure you mash them thoroughly before adding them to the Flapjack mixture.
