Hazelnut Melting Moments

Share a little Happiness with these Hazelnut Melting moments. They melt in the mouth with a vanilla buttery flavour and a lovely roasted Hazelnut taste. The recipe is based on these Melting Moments (Butter Biscuits) and is so easily adaptable. If you bake for charities and bake sales, these recipes are ideal.

Equipment

Ingredients

  • 75 grams icing sugar sieved
  • 150 grams unsalted butter at room temperature
  • ½ teaspoon Vanilla Extract
  • 150 grams plain flour sieved
  • 75 grams cornflour sieved
  • 75 grams Roasted Ground Hazelnuts

Instructions

  • Preheat the oven to 160deg fan assisted. Have ready two baking trays lined with a silicone baking sheet or baking parchment.
  • Cream the butter, vanilla extract and sieved icing sugar together until smooth and well combined. This should only take a couple of mins, especially if you are using a stand mixer with a scraper beater.
  • Add the sieved flour, cornflour and ground Hazelnuts. Mix everything together until you have a smooth firm dough.

 If you are not using a mixer, you may need to bring the dough together using the warmth of your hands.
  • Make 20 balls of dough of equal sizes. Place these onto the prepared baking sheets. TIP: If you wish to be exact, weigh the dough first, then divide into equal portions.
  • For these Hazelnut Melting moments, I wanted them to be a little larger and flatter than the more traditional Melting Moments. Press down each ball of dough using a small sheet of baking parchment and the bottom of a glass. Decorate as you wish with a fork.
  • They will retain a firm shape with hardly any spread at all.
  • Bake in the centre of the oven for 15 – 20 mins. Or until baked with a slight golden colour. Although they may still feel slightly soft to the touch they will firm up once cooled.

Notes

If mixing by hand and the dough looks crumbly, don't be tempted to add any liquid, use the warmth of your hands to bring all the dough together.
