Melting Moments (Butter Biscuits)

Just five ingredients are needed to make these Melting Moments (Butter Biscuits). They call these butter biscuits melting moments for a very good reason. They literally melt in the mouth and have a rich Vanilla butter taste. No eggs required. Easy to make and great for coffee mornings and bake sales.

Equipment

Ingredients

  • 75 grams icing sugar sieved
  • 150 grams unsalted butter at room temperature
  • ½ teaspoon Vanilla Extract
  • 150 grams plain flour sieved
  • 75 grams cornflour sieved

Instructions

  • Preheat the oven to 160deg fan assisted. Have ready a baking tray lined with a silicone baking sheet or baking parchment.
  • Cream the butter, vanilla extract and sieved icing sugar together until well combined.
  • Add the sieved flour and cornflour. Mix everything together until you have a smooth firm dough.
  • Shape the dough into walnut sized pieces. I managed to make 20 biscuits. Place these onto the prepared baking sheet. TIP: If you wish to be exact, weigh the dough first. Then divide into equal portions.
  • Press down each ball of dough a little with a fork. These butter biscuits do not spread like other cookies. They still retain a firm shape with hardly any spread at all. If you want a flatter biscuit, press down a little more.
  • Bake in the centre of the oven for 15 - 20 mins. Or until baked. They may still feel slightly soft to the touch and still look pale when you take them out of the oven. But they will firm up once cooled.
  • Serve individually or sandwich a few together with Vanilla Flavoured buttercream or your favourite jam.

Notes

If you want the Melting Moments of equal size, weigh the whole dough first before dividing into equal portions.
Baking times will differ slightly if you chose to make the biscuits larger /smaller/thicker but only by a few minutes.
Having cornflour in the recipe gives these biscuits a nice light, melt in the mouth texture. 
Replace with Plain Flour if you have run out of Corn Flour.
