Mincemeat Slices

These Mincemeat Slices are made with Rye Flour and Oat base and topping which also has a hint of nutmeg flavour. Use a luxury jar of sweet Mincemeat with spices, cherries and Kirsh for extra Christmas flavours.

Equipment

  • 8x8inch (20x20cm) square baking tin
  • Baking Parchment

Ingredients

  • 150 g butter
  • 75 g soft light brown sugar
  • 225 g light Rye flour. Wholemeal or Dark Rye flour are also fine.
  • 110 g porridge oats not jumbo oats
  • ½ teaspoon ground nutmeg cinnamon is also nice.
  • 225 g mincemeat sweet mincemeat

Instructions

  • Pre-heat the oven to 200°C/ 180 Fan Oven
  • Grease and line a 8 x 8 inch (20 x 20 cm) with baking parchment.
  • Gently melt the butter and sugar in a large pan over a medium heat until the butter and sugar have melted.
    150 g butter, 75 g soft light brown sugar
  • Mix together the flour, porridge oats and Nutmeg in a bowl.
    225 g light Rye flour., 110 g porridge oats, ½ teaspoon ground nutmeg
  • Take the melted butter and sugar off the heat and gradually add the flour and oat mixture. Mix all the ingredients until well combined with no dry floury bits.
  • Spoon half the mixture into the prepared baking tin. Using the back of a spoon or your fingers, firmly and evenly press down the mixture getting into all of the corners. Press as firm as you can to avoid a crumbly bake.
  • Spread the mincemeat evenly over the top followed by the remaining oat mixture over the top of the mincemeat. Pressing down firmly and evenly.
    225 g mincemeat
  • Bake the Mincemeat Slices in the centre of the oven for 20 mins or until baked with a lightly golden brown top. Leave to cool completely on a cake rack before slicing into square with a sharp knife. A serrated knife is ideal.

Notes

Storage
These Mincemeat slices will keep in an airtight container for a couple of days. I am not sure if they are freezer friendly as this is not something I have tried.
Baker's Tips
  • To get the best possible flavour try using Rye or Wholemeal flours.
  • Jars of Mincemeat are often available at reduced prices in the New Year. Buy a jar or two and use the clean empty jars to make Jam and Marmalade in the summer.

  • Make sure you firmly press down the Oaty base in the prepared tin, before adding the Mincemeat layer.
