These Mincemeat Slices are made with Rye Flour and Oats in the base and topping which also has a hint of nutmeg flavour. Use a jar of luxury sweet Mincemeat with spices, cherries and Kirsh for extra Christmas flavours.

This recipe is adapted from Delia Smith's 'Wholefood Mincemeat Slices' - in 'Delia Smith's Christmas' cookbook. I changed some of the ingredients, such as the type of flour, using butter instead of Margarine and added Nutmeg.
I also wanted to make thicker slices so used a smaller sized tin than the original recipe suggested. Just make sure you leave it to cool completely before you cut it into slices.

Ingredients and Substitutions
This is just an overview of the ingredients I used, with possible alternatives and why I may have used them. See the recipe card below for a full list of ingredients and quantities.
- Butter - Butter has a much better taste than margarine.
- Soft Light Brown Sugar - You could use dark brown sugar which also gives a nice nutty flavour. Caster sugar is fine if that is all that you have.
- Light Rye Flour - Dark Rye or whole meal flour is also good to use.
- Porridge Oats - Not jumbo oats as they are thicker and will take longer to bake.
- Ground Nutmeg - Mixed spice or cinnamon will also taste nice.
- Mincemeat - Choose the most flavoursome jar of sweet mincemeat as this will make the difference to the overall flavour of these Mincemeat slices.
Step by Step Instructions
Pre-heat the oven to 200°C/ 180 Fan Oven. Grease and line a 8 x 8 inch (20 x 20 cm) with baking parchment.
Step 1: Gently melt the butter and sugar in a large pan over medium heat until the butter and sugar have melted.
Step 2: Mix together the flour, porridge oats, and Nutmeg in a bowl.
Step 3: Take the melted butter and sugar off the heat and gradually add the flour and oat mixture. Mix all the ingredients until well combined with no dry floury bits.
Step 4: Spoon half the mixture into the prepared baking tin. Using the back of a spoon or your fingers, firmly and evenly press down the mixture getting into all of the corners. Press as firmly as you can to avoid a crumbly bake.
Step 5: Spread the mincemeat evenly over the top.
Step 6: Finally add the remaining oat mixture over the top of the mincemeat. Pressing down firmly and evenly.
Step 7: Bake the Mincemeat Slices in the centre of the oven for 20 mins or until baked with a light golden brown top. Leave to cool completely on a cake rack before slicing into squares with a sharp knife. A serrated knife is ideal.
Storage
These Mincemeat slices will keep in an airtight container for a couple of days. I am not sure if they are freezer friendly as this is not something I have tried.
