Why You Will Like This Recipe.
- This recipe uses up any remaining jars of Mincemeat left over after the festive season. If you are like me I often buy a few jars of Mincemeat that go on sale after the holidays as it keeps for such a long time.
- If you are looking for ways to use Mincemeat, this recipe is a lovely alternative to Mince Pies where no pastry making is involved.
Ingredients and Substitutions.
This is just an overview of the ingredients I used and why I may have used them. See the recipe card below for a full list of ingredients and quantities.
- Buttermilk: Buttermilk helps give the Muffins a lovely moist texture. You can use plain Yogurt as an alternative.
- Milk: Whole Milk or semi skimmed milk is fine.
- Butter: Unsalted butter. I prefer to use butter because of the taste.
- Egg: Medium size and free range if possible.
- Flour: I love using Spelt flour, which is what I used for this recipe. Plain flour is fine.
- Baking Powder: An essential raising agent for this recipe.
- Mincemeat: Sweet Mincemeat containing dried and fresh fruits, spices, suet and brandy. It should not be confused with Minced Meat.
- Mixed Spice: I used ground mixed spice, nutmeg or cinnamon are good alternatives.
- Sugar: For a lovely nutty flavour and rich colour, I used a mix of light brown and dark brown sugars. White caster or golden caster sugar is fine, but the colour and taste will differ.
- Optional Toppings not shown in the image: Nuts and Demerara sugar.
Step by Step Instructions
Preheat the oven to 180 deg Fan assisted. Place 12 paper Muffin/Cupcake cases into a muffin tin.
Step 1: Mix together the melted butter, egg, buttermilk and milk in a large jug. Leave to one side.
Step 2: In a separate bowl mix together the flour, baking powder, mixed spice and brown sugars.
Step 3: Make a well in the centre of the dry ingredients and pour in the butter and milk liquid mix. Mix thoroughly.
Step 4: Add the Mincemeat and mix until well combined. Using an ice cream scoop, place equal amounts of batter into the Muffin cases to about ¾ full allowing for the muffins to rise a little. As an optional topping, scatter the tops of half of the Muffins with a few chopped nuts and demerara sugar.
Step 5: Bake in the oven for 15 - 20 mins or until baked, testing the centre of the Muffins with a skewer until it comes out clean. Turn out onto a cake rack to cool a little. They taste delicious when served warm.
Storage
Room Temperature: They keep really well for a few days in an airtight container.
Fridge Friendly: Bring back to room temperature before serving.
Freezer Friendly: Freeze the Muffins individually on a tray before placing them in suitable containers. Bring back to room temperature before serving or bake in a moderate oven for a couple of minutes.
Baker's Tips
- Do not overbake the muffins as they will become dry and lose a lot of their moisture from the buttermilk.
- Using a Muffin Tin will help support the muffin batter as it rises in the paper case, but do not overfill them.
