Cheese and bacon turnovers made with ready-rolled puff pastry are super easy to make. Each turnover is generously spread with green pesto and filled with pieces of crispy bacon, melted cheese, and slices of tomato.

Ingredients and Substitutions
This is just an overview of the ingredients I used to make Cheese and Bacon Turnovers, with possible alternatives and why I may have used them.
- Puff Pastry - Use Ready Rolled Puff Pastry to save you time. Use all butter puff pastry if you can get hold of it.
- Bacon - Smoked or unsmoked is fine. For a vegetarian version, replace it with a mix of peppers and tomatoes.
- Cheese - Using ready cut slices of cheese is quicker and easier. Use any firm cheese such as Cheddar. Grated cheese is also fine. Add a little extra for an optional topping.
- Tomatoes - Small Cherry Tomatoes are best, if using any large tomatoes, slice them thinly in half.
- Pesto - Green of Red Peston is ideal. You could also use mustard or chutney.

Step By Step Instructions
To make these Bacon Cheese Turnovers with flaky puff pastry, first pre-heat the oven to 200c deg fan assisted oven.
Step 1: Spread the rashers of bacon on a sheet of baking parchment placed on a large, flat baking tray.
Step 2: Bake in the oven for about 6 mins until the bacon is just cooked but not crispy, as it will have extra baking time in the oven later.
Step 3: Roll out the sheet of ready-made puff pastry onto another baking tray covered with baking parchment. Cut the puff pastry evenly into 12 squares.
Step 4: Spread each square with the Green Pesto.
Step 5: Add a slice of Cheese on top of the Pesto. Cut the bacon in half and place each piece on top of the cheese, sharing equally between each square of pastry. Slice each tomato in half and place on top of the bacon.
Step 6: Carefully fold two opposite corners of the puff pastry into the middle, pressing them together to keep them in place. Add some extra grated cheese (optional) on the top.
Step 7: Bake at 200c deg for about 12 - 15 mins, or until the pastry is golden and cooked underneath and the cheese has melted. Remove from the oven and leave to cool a little before serving.
Storage
Eat Bacon and Cheese Turnovers warm or cold. Or store them in the fridge for up to a couple of days. Reheat them, if you wish, until cooked through.
Cook's Tips
- For finger snacks and party-sized portions, cut the Puff Pastry into smaller squares and add a smaller amount of filling.
- As an alternative filling. Try spreading the pastry with Mustard or Red Pesto.
- For a vegetarian version, omit the bacon and replace it with slices of baby tomatoes or peppers.
