Chocolate Chip Cookie Bars with Cherries and Oats are easy to make. Baked in a traybake they are ideal for bake sales, party snacks, or nibbling with your favourite brew.
How to Make this Recipe

Preheat oven to 170c fan assisted. Grease and line a 10.5 inch (27cm) x 7 inch (17.5cm) x 1 inch traybake tin or similar with baking parchment or greaseproof paper.
Beat together the butter/margarine and sugar until soft, light, and fluffy. Add the flour and baking powder, followed by the Vanilla Extract, oats, cherries, and chocolate chips. Mix together until well combined forming a firm dough. Do not overmix.
Press the dough evenly into the prepared baking pan. Bake in the oven for approx. 20 - 25 mins or until lightly golden. Testing the centre of the bake with a skewer until it comes out clean. Take out of the oven and dust with sugar while still warm.
Leave in the tin to cool completely before turning out and cutting into slices of cookie bars.

- 1 x baking tin Measuring 10.5 inch (27cm) x 7 inch (17.5cm) x 1 inch or similar
- Baking Parchment or greaseproof paper
Ingredients
- 225 g butter softened or margarine
- 115 g soft brown sugar
- 225 g plain flour sieved
- ½ teaspoons vanilla extract
- ½ teaspoons baking powder sieved
- 50 g porridge oats not jumbo oats
- 100 g milk chocolate chips dark, white of milk chocolate
- 100 g glace cherries roughly chopped
- 1 tablespoon demerara or caster sugar for dusting
Instructions
- Preheat oven to 170c fan assisted. Grease and line a 10.5 inch (27cm) x 7 inch (17.5cm) x 1 inch tray bake tin or similar with baking parchment or greaseproof paper.
- Beat together the butter and sugar until soft, light and fluffy. This will only take a couple of mins if using an electric mixer
- Add the flour and baking powder, followed by the Vanilla Extract, oats, cherries and chocolate chips. Mix together until well combined and forms a firm dough. Do not over beat.
- Press the dough evenly into the prepared baking pan.
- Bake in the oven for approx. 20 - 25 mins or until lightly golden. Testing the centre of the bake with a skewer until it comes out clean.
- Take out of the oven and dust with sugar.
- Leave in the tin to cool completely before turning out and cutting into cookie bars or slices.
