These Fruit and Seed Flapjacks with banana are made using a combination of dried fruits such as raisins and sultanas, and a mixture of various seeds like sunflower seeds, wheat flakes, barley flakes, millet, and oats.
In addition to my other flapjack recipes, such as these Flapjacks with Honey (without Golden Syrup) these Flapjacks with Banana are an excellent choice to include in a lunchbox and serve as a delightful mid morning snack.

Ingredients and Substitutions
This is just an overview of the ingredients I used with possible alternatives and why I may have used them. See the recipe card below for a full list of ingredients and quantities.
- Banana - Overripe bananas tend to be sweeter and are ideal for adding to a flapjack mixture.
- Honey - Set or runny honey is fine, it all gets melted in the pan.
- Sugar - I used soft brown sugar which gives a slightly nutty taste but white caster sugar is fine if that's all you have.
- Butter - Unsalted, use the best you can find, it makes all the difference to taste.
- Flour - For this recipe, I used Spelt Wholemeal flour for its lovely nutty texture and taste, any wholemeal flour is fine. You can use plain white flour if you wish, but the taste, colour and texture of the flapjacks may differ slightly.
- Seeds - I used a 5 Seed Blend mix which I bought from Shipton Mills. You can use any mix of seeds that you wish.
- Dried Fruits - Use a mix of dried fruits such as Sultanas, Raisins and Currants.
- Porridge Oats - A staple when it comes to making Flapjacks. Jumbo oats are too large and could result in a crumbly Flapjack. Tip: If you can only get hold of Jumbo oats, give them a blitz in a food processor for a few seconds.
Step By Step Instructions
Preheat the oven to 180c fan assisted. Grease and line the base and sides of an 8inch (20cm) x 8 inch (20cm) square tin with baking parchment.
Step 1: Melt the butter, sugar and Honey in a large pan over medium heat, until everything has melted. Taking care not to boil the mixture.
Step 2: Remove the pan from the heat and stir in the mixed dried fruit, this allows the dried fruits to soften a little. Mix thoroughly.
Step 3: In a separate bowl, mix together the flour, seeds, and oats.
Step 4: Add the melted butter, sugar, honey, and dried fruits mixture to the bowl and stir everything thoroughly until all the dry ingredients are incorporated.
Step 5: After that, mash the banana and add it to the mixture.
Step 6: Give everything a good mix ensuring the dried fruits and banana is evenly distributed.
Step 7: Spread the Fruit and Seed Flapjack mixture evenly and firmly into the prepared 8inch square cake tin.
Step 8: Bake in the centre of the oven for 15 - 20 or until baked and golden brown in colour.
Remove from the oven and leave in the tin to cool completely before slicing into individual bars. If you slice Flapjacks while they are still hot, they will crumble.

Store these Fruit and Seed Flapjacks with Banana in an airtight container.
Top Tips
Tip 1 - Adding a little flour to any flapjack mixture helps give them a chewy texture.
Tip 2 - Adding the dried fruits to the melted butter, honey and sugar will help plump up the fruits before you add them to the dry ingredients.
FAQ
Mixed dried fruits or a mix of Raisins, Currants Sultanas and candied peel are ideal for making Fruit and Seed Flapjacks.
Use a blend of seeds like Sunflower seeds, Pumpkin Seeds, Barley Wheat, Chia Seeds, or any other seed variety that you prefer.
While overripe bananas are sweeter, you can still use Bananas that are firm and ripe. To avoid any lumps of bananas, make sure you mash them thoroughly before adding them to the Flapjack mixture.

- 150 g Mixed Dried fruit such as currants, raisins and sultanas

- 225 g Porridge Oats not jumbo oats
- 1 ripe banana
- 50 g Wholemeal Spelt Flour or plain white flour
Instructions
