These Jam Thumbprint Biscuits are quick to make, ready in about 30 mins. An ideal recipe for children to make along with these Melting Moments or these Hazelnut Melting Moments. Make a bundle of them for the weekend.
I've no idea where the original recipe came from, I'm using the basic Melting Moments (Butter Biscuits) recipe and simply made a dimple in the middle and added jam and curd. Try making these thumb biscuits a little smaller so young children can make an indent using their little fingers and thumbs. Ask them to count how many they can make.

Preheat the oven to 160deg fan assisted. Have ready a couple of baking trays lined with a silicone baking sheet or baking parchment.
Cream the butter, vanilla extract and sieved icing sugar together until well combined. Add the sieved flour and cornflour. Mix everything together until you have a smooth firm dough.
Shaping the Biscuit Dough
Shape the dough into walnut sized pieces, making about 20 biscuits. Place these onto the prepared baking sheets with a little space around them to allow for any spread, which should not be much. This recipe does not spread like other cookie doughs.
Press down each ball of dough a little. Make a thumbprint or hollow in the centre and fill with jam or curd. TIP: To avoid bubbling over, do not overfill.
Bake in the centre of the oven for 12 - 15mins. Or until baked with a slight golden colour. Dust with icing sugar when cooled completely.
The texture is nice, short and crumbly. Keep them in an airtight container.

- 75 grams icing sugar sieved + extra for dusting
- 150 grams unsalted butter at room temperature
- ½ teaspoon Vanilla Extract
- 150 grams plain flour sieved
- 75 grams cornflour sieved
- 50 grams Jam or Curd
